Professional chefs: Is low copper pairs best cooking surface with cooking steel or aluminum?

We just received a Gourmet Standard triple layers (bottom of copper, aluminum base, stainless steel surface), set. I have read that aluminum is the best surface because it is curable. Is this true? And if so, it is worth considering? We hope this is a set that can grow with the same kitchen. When aluminum is the best option … Thank you!

Cooking in aluminum the surfaces are anodized aluminum, which means that aluminum was a chemical bath, the only strone than steel. Calphalon One is an example. Stainless kitchen surfaces are generally preferred by cooks because a) it does not react with acidic foods, as ketchup b) non-porous and easy to clean c) stainless steel surfaces are lighter than aluminum, black anodized, so it is easier to see affection "in development at the bottom of the pan. The bread which we received is of the highest quality and the type used by the best chefs around the world. For if curable bread, get a couple of pieces of iron. They are super-conductors Cheap and perfect heat. A well-stocked kitchen is stainless steel, cast iron, and the pieces do not stick. The right tool for every job.
